Apple & Oat Pancakes

Serves 4

400ml trim milk
200g plain flour
1 tsp canola oil
pinch salt
3T caster sugar
1/2 tsp ground ginger
2 eggs
2 tsp baking powder
120g porridge oats
3 apples (grated, skin on)

Mix together wet ingredients (except apple), and sift in dry ingredients. Allow to stand for an hour (or overnight) in the fridge. Mix again lightly and stir in the apple. Cook in a lightly oiled pan over a medium heat until bubbles form on the surface then flip. Cook until lightly browned.

Serve with fresh fruit, low fat yoghurt and a drizzle of honey or maple syrup.
