Chicken & Vegetable Curry

500g Chicken Breast
2 Tbsp Curry Paste
2 cups various vegetables (carrot, capsicum, green beans, pumpkin, kumara)
1/2 can lite Coconut Cream
1 tsp Brown Sugar

Dice chicken and brown in a little oil. Add curry paste and cook for a further 2 minutes. Add coconut cream and brown sugar (to taste) and simmer until reduced. Steam vegetables in the microwave until just tender and add them to the curry. Simmer for a further 5 minutes until thickened.

Serve with steamed rice.
