Easy Satay Sauce

2 heaped tsp of ‘No Added Sugar’ peanut butter (I like Sanitarium Crunchy)
2cm (or 2 tsp) finely chopped ginger
200ml coconut milk
Juice of a fresh lime
½ tsp chili flakes (optional)

Combine peanut butter and coconut milk, and melt gently over a low heat. Add fresh ginger and chilli flakes, and stir to combine. Heat through.
Remove from the heat and add the juice of 1 lime. Taste to check seasoning and where required add extra lime/ginger etc.

Works well in a stir fry, on drumsticks and kebabs, or as a dipping sauce.
