Fruity French Toast

Makes a great Mother’s Day or Birthday breakfast treat.

Serves 2

4 Slices Fruit Bread
2 Eggs whisked with a dash of milk
a pinch of salt
a sprinkle of cinnamon

Dredge bread in egg mixture to coat. Spray a pan with olive oil and heat over medium heat. Add bread 2 slices at a time. Cook until egg cooked through and browned.

Serve with fresh fruit, low fat yoghurt and a drizzle of honey or maple syrup, or sprinkle with icing sugar.
