Apricot Chicken

Serves 4

1kg Chicken Pieces
1 Medium Onion (sliced)
3 Cloves Garlic (crushed)
4T Low salt Soy Sauce
4 tsp Sweet Chilli Sauce
1 Tin Apricots in Juice
1T Cornflour

Brown the chicken in a casserole dish then add the onion and garlic and cook until soft. Drain the apricots, reserving the liquid. Scatter apricots over the chicken. Mix together soy sauce, sweet chilli sauce, cornflour and the juice from the tinned apricots, and pour over chicken. Cover and cook at 180ºC until chicken is cooked through.

Serve hot with steamed rice and vegetables.
