Beef Fajitas

Serves 6

2 Tbsp Lemon or lime juice
3 cloves garlic, crushed
1/2 tsp cumin
1 tsp chilli powder
500gms Beef Steak
2 Capsicums, cut into strips
1 medium onion, sliced
2 courgettes, sliced into strips
Handful finely chopped coriander
6 Jumbo tortillas

Combine lemon juice, spices and herbs and marinate beef for at least 1 hour. Cook beef in a hot pan and cook to your liking. Place in a warm spot to relax. Brown and soften vegetables in the same pan. Slice steak into strips about 1.5cms wide. Warm tortillas in the oven for 5 minutes, or microwave for 30 seconds. Assemble meat and vegetables in the middle of the tortilla, and wrap.
