Cheesy Chicken & Ham Roll-ups

Serves 4

1 Cup Toasted Breadcrumbs
4 chicken breasts
100g Lean Ham
3T reduced-fat cream cheese
3T fresh mixed herbs
2T flour for dusting
1 lightly beaten egg
1 tsp olive oil

Cut each chicken breast almost in half, then open and place between two pieces of baking paper and flatten with a rolling pin. Top each breast with ham, cheese and herbs. Roll the chicken from the shortest end and secure with toothpicks. Chill for 10 minutes.

Lightly coat the chicken in flour, then egg, then breadcrumbs. Grease a baking tray, add the chicken and bake at 180ºC for 45 minutes. Turn once during cooking.
