Sweet Chilli Chicken

Serves 4

400gm chicken breast, sliced
1 medium onion, sliced
2 cloves garlic, crushed
2 Carrots, sliced
2cm (or 2 tsp) ginger, crushed
1 medium capsicum, sliced
1 cup green beans
1 medium courgette, sliced
1/2 cup sweet chilli sauce
2 Tbsp salt reduced soy sauce

Brown chicken and cook for 2 minutes. Add onion, garlic and ginger and cook over a medium heat until softened. Add carrots and cook for 5 minutes before adding capsicum, courgette and green beans. Stir fry for an additional 2 minutes. Combine sweet chilli sauce and soy sauce, and pour over meat and vegetables. Toss well and simmer gently until meat and vegetables are cooked through.

Serve with rice or noodles.
