Sweet & Sour Pork

Serves 4

1 onion, diced
500gm trim pork, diced
1 capsicum, sliced
400gm can pineapple pieces
2 Tbsp Salt reduced soy sauce
1/4 cup tomato sauce
2 Tbsp cornflour
1/2 cup white vinegar
1 cup various sliced vegetables e.g. Carrot, courgette, celery, beans

Drain pineapple pieces, reserving juice. Brown onion and pork in 2 tsp oil. Add capsicum and stir fry for 1 minute. Add remaining vegetables and pineapple pieces, and stir fry for 5 minutes. Combine pineapple juice, tomato sauce, vinegar, soy sauce and stir in cornflour, mixing until smooth. Stir into pork mixture and simmer gently until sauce thickens and pork is tender.

Serve with steamed rice.
