Fillet of Fish in Orange Sauce

Adapted from Annabel Karmel – New Complete baby & Toddler Meal Planner

Makes around 5-6 portions

200g white fleshed fish

120ml orange juice (fresh is best)

a few tablespoons grated cheese

fresh parsley (finely chopped)

1/4C crushed cornflakes

1T margarine

Place fish in a greased oven dish and cover with orange juice, cheese, parsley and cornflakes.  Dot with margarine.  Cover with tin foil and bake at 180C for 15-20 minutes.  Flake the fish, carefully removing any bones then mash everything together with the cooking liquid.
